      #patatatachallenge

I know this technique has no mystery, but today is the second dish in my house.

You don’t know what smell we have, one day a week I almost always make it, my girls come to eat mom’s omelet.

My husband is in his office and has already shouted at me “you are making omelette”. I must say that his office is on the third floor and that’s why he has to raise his voice.

Next time I will tell him to send me a WhatsApp hahaha just kidding.

The onion is what I do first goes a little confit and then I put the potato that is fully confit, almost at the end I raise the temperature to brown.

It goes with abundant olive oil, I like it better with this oil,

The eggs are beaten, in my case this one has 8 free-range eggs from free-range hens.

When the potatoes are ready, take them out and drain the excess oil in a colander and then mix with the egg, I have to say that I put the salt when the potato is confit.

I put it back in the frying pan and I curdle it as you can see.

A daily dish that is eaten for breakfast, lunch, dinner at all times.

As a pincho, tapa, appetizer, main meal, etc etc.

How would you eat it? My little one, if there are any leftovers, makes a sandwich for school.

As you can see it is saying eat me

      • It looks sensational. The potato omelette is a very simple dish apparently, but in reality it is complex and has many edges.
With only 4 ingredients (5 if we count the salt) there are a thousand ways of interpreting it. It is not in vain that it has fed, never better said, numerous debates. With or without onion, caramelized or poached, very curdled, creamy, not very curdled (and some even with a spoon).

You have inspired me Mercedes and when I can I will upload one too and I will show the point that I like. So we open debate 🤣

How delicious it looks and me without potatoes. The potato omelet is an elaboration that although a priori seems simple requires technique and love to get it right and yours looks amazing. Great job

what a pleasure to read you, Mercedes! Thank you for sharing this delight with the community and for joining the #patatatachallenge with so much energy! 🍳🥔

Your tortilla has a beautiful golden color and a texture that just looking at it makes you want a piece or two! What a great idea to confit the onion first and then the potato, I’m sure it will taste much softer and sweeter.

I laughed about your husband shouting from the third floor, that’s the power of the aroma of a good homemade tortilla! Hahaha 🗣️

I thought it was interesting about salting the potatoes after confit, did you notice any difference in flavor or texture doing it that way? It might be a good tip to keep the potatoes from releasing water prematurely. I was also wondering, have you ever made it with any different ingredients, like zucchini or chorizo?
It would be great to know how you customize it depending on the day.

Big hugs and bon appetit always.❤️

            @undefined ¡Qué maravilla, Mercedes!

What a delicious and comforting dish! I can almost imagine the aroma wafting through the house and the warm, crispy texture of that omelette. 😋 It’s beautiful how something so simple can bring so much joy, especially when it’s made with such love and care.

Esa tortilla huele a madre, a hogar, a familia.
