      Codfish with onions

Cod with onions is a typical Easter dish, a dish that is made in my homeland (Jaén) and also in other places in Spain.

My grandmother used to say that on Maundy Thursday and Good Friday it was not cooked because they would be dedicated to the Holy Offices and the processions and we were not going to be in the kitchen ” cacharreando” between frying pans and pots. She was deeply religious and that is how she taught the whole family.

On Holy Wednesday the food was prepared for those days. Cod with onions, potato or asparagus omelette, tomatoes with potatoes, “potaje de vigilia”, torrijas, pestiños….

I have followed the family tradition and I try to cook everything on Wednesday, and the encebollado is the dish that is never missing, plus it is much richer if it is made one or two days before.

This is my bacalao encebollado. The recipe is my mother-in-law’s (very similar to my grandmother’s) but with a touch of my own, I add turmeric instead of food coloring and chili strands when plating.

Normally it is bought salted but I buy it fresh and I cut it with patience and care so that all the pieces come out as evenly as possible.

The quantities are so that you have a reference, because I do everything “by eye”.

      Ingredients:

      1 kg of desalted cod

      1 onion

3 soup spoonfuls of crushed tomatoes

      2 cloves of garlic

      A few sprigs of parsley

      A few saffron strands

      Extra virgin olive oil

      2 potatoes

      Turmeric

      1 fish stock cube

      Flour

      2 boiled eggs

      Water

      Salt

      Preparation:

Chop the cod (if you do not buy it fresh, desalinate it for 2 days in the refrigerator, changing the water every 8 hours, drain well and dry).

Boil the eggs and set aside.

Fry the potatoes cut in not very big squares.

Flour and fry the cod in a frying pan with extra virgin olive oil. Remove and set aside.

In a separate casserole or earthenware dish, fry the cod in 5-6 tablespoons of the oil in which we fried it, the chopped onion, crushed tomato and paprika.

Once the sauce is ready, cover with water, a pinch of salt, a little turmeric, fish stock cube, saffron and let it boil for a while.

We place the cod, the potatoes, a crushed garlic and parsley made with the mortar and the chopped boiled eggs.

Let it cook over low heat until the broth binds.

It is a delicious dish with a lot of history. I would love to know if you know it and if so, do you prepare it in any other way?

I hope it has been a good Semana Santa for all of you. And although I’m late, Happy Easter❤.

what a delight, Maloles! This cod with onions looks like a dish full of love and family memory 🧡. I was really struck by the little golden color of the broth, you can tell the turmeric and saffron worked their magic, and that touch of the chili strands at the end makes it even more special!

I thought it was so cute how you told your grandmother’s tradition and how you keep it alive by cooking all day on Holy Wednesday. Those stories add so much value to what’s on the plate.❤️

One question: when you add the chopped boiled eggs at the end, do you do it just before turning off the fire or do you let them boil a little bit with the stew?

thanks for sharing this recipe so full of memories and flavor! And happy Easter to you and yours ✨.

          @undefined Muchas gracias Sussan.
El huevo lo dejo que hierva hasta que está listo. Le sirve para ligar un poquito la salsa y desde luego el sabor que aporta con la yema es maravilloso ☺️

That cod is delicious, thank you for sharing the recipe! In my area it is not so common that way of preparing cod, although at Easter cod is cooked in different ways, especially the stew

I loved reading about your grandmother’s devotion and how that shaped your family’s rhythm during Holy Week — the quiet reverence, the intentional preparation, the joy of flavors that bloom after a day or two of rest. It’s so special that you carry this legacy forward with your own personal touch — turmeric instead of food coloring, chili strands for a final whisper of spice. Thank you for sharing this dish and its soul with us. 💞

@undefined Thank you very much Lana. Traditions must be respected and those legacies that our elders teach us as children are a treasure to be kept as “gold in cloth” as we say around here❤🙌

what a delightful cod with onions! 😍 The presentation is very neat and that touch of turmeric with chili strands gives it a sophisticated air without losing the traditional essence. Do you let the sofrito reduce a lot or do you prefer it to be lighter so that the broth takes center stage? We love to see dishes with family history and well-applied technique.

🤔What will Loles come up with in front of the #PatataChallenge?

@soldamiani Gracias Sol.
