Cod in Spiral with Sea and Vegetable Garden Textures

      #PlatingChallenge

      Profile: Amateur

Fried cod, Squid ink tuile, Spinach oil, Spinach paper, Parsley oil powder, blackberry salt, chili strands.

I stole a couple of pieces of fried cod from the encebollado. They were so perfect that I refused to put them all in the stew. And then this dish was born.

I separated the slices to place them on a base of spinach oil that I made the day before. I sprinkled some parsley oil powder.

To give it that point of color that contrasted with the white and green, I added blackberry salt and chili strands. And now all that was left was to put the other protagonist of my dish, a squid ink tuile in the shape of a spine. But I saw it a bit lonely, so I wrapped it in spinach paper. That paper result of my night experiment 😅.

We ate it for dinner and then I took a deep breath, all was well….

I love how you always take a familiar ingredient—like cod or spinach—and turn it into something entirely unexpected. The composition is stunning, but even more than that, I feel your inner world behind every choice. It’s not just food, it’s a reflection of your restlessness, your search, your creativity. Thank you for always sharing not only what’s on your plate, but what’s in your heart too. 💞

what a great dish, Maloles! 🫶🏼

Truly, seeing that spine-like tuile on the cod is like finding a little marine sculpture on the plate. And that you say it was born from a “steal” of cod from the stew makes it even better! That spontaneity is pure gold in the kitchen.✨

Using spinach paper as a coat for the tuile was a great idea, because not only does it add texture and color, but it also gives it that “something alive from the sea and the garden” feel, just as you say. The detail of the parsley oil powder also seemed to me a super original touch.
Thanks for sharing your process and taking on the challenge, even with an idea that came out of nowhere, that’s how great recipes are born! Have you tried presenting this same idea in a cold version, as a warm salad or starter?

My advice: keep exploring those late night creative impulses, sometimes the best ideas come just when we’re not looking for anything.

hugs and keep surprising us in the community!❤️

            @loles-mhotmail-com ¡Maloles, qué gusto leerte!
