      Codfish time

It is time for codfish, the sound of drums, the smell of incense and wax. It is a time of torrijas, of family, of processions, of reflection, of vacations, of tunics and capiruchos, of hot chocolate, of stews. It is Holy Week, the biggest of the year.

For those of you who celebrate it. Happy madrugá, happy Good Friday 🙌🙏

The cod frying has that golden, crispy texture that only comes with patience and good oil (you can even hear the music the oil makes when it embraces the cod in the pan) 😍.

Also, you can tell you cut it into even portions, which helps it cook evenly, very nice touch! 🫶🏼

It made me think about how every family has their own way of preparing cod at this time of year. Do you always make it fried like this or do you also prepare it in stew or with tomato?

Maloles, your post conveys not only the flavor of the cuisine, but also the feeling of Semana Santa. Thanks for sharing it! ❤️

@sussan_scoolinaryteam Gracias Sussan.

          • Wonderful fried cod, and in tomato, and with chickpeas…It is not easy to get the frying point, but in your photo it looks perfect.
