Crispy pork ear ingot with robe and oloroso wine and mushroom sauce

      #PlatingChallenge

      Amateur profile

Ingredients: pig’s ear, onion, cloves, carrot, leek, oloroso sherry wine, mushrooms, sweet potato, iota, salt, mint leaves and petals

That in a challenge about plating, art and beauty, it occurred to me to cook a delicious raw material, but not very pretty, to be honest, is nonsense. But I wanted to try to make the ear attractive to the eye. It is not a great merit of mine, because lately there are several haute cuisine restaurants making wonderful dishes with casquería, at least in Spain. There is the Tasqueria, which only has casquería on its menu; but also others like Lakasa or Portal de Echaurren.

Before, I didn’t eat any casquería, nothing. But thanks to restaurants like these and attractive presentations, I started to like it. That’s why I wanted to make a nice dish with pig’s ear, as a small tribute to casquería.

After perfectly cleaning and blanching the ear, I cooked it in the traditional way with some vegetables, salt, pepper and some cloves. Then I chopped it very finely and while still hot, I made an ingot and let it cool. Half an hour before preparing it, I put the ingot in the freezer. This made it easier to cut into portions that I cooked on a very hot griddle, so that it would be very crispy.

The sauce is a reduction of the broth with Oloroso de Jerez wine. I sautéed some small mushrooms to accompany it. Besides, I have prepared sweet potato in two textures, a textured cream with iota and crispy chips.

It is a dish that smells of tradition, and a tribute to market cuisine, to Spanish tapas. A rustic canvas in earth and fire tones. But, above all, a delight.

I can’t believe you turned pig’s ear into something this elegant! 😍 Your cooking always blows me away — the way you combine rustic and sophisticated on one plate is something only you can do. And yes, if you ever decide to open your own tapas bar, I’ll be the first guest. With a napkin in my lap and a glass of oloroso in my hand. ❤️🍷🐷 Sis, keep pushing the boundaries — you have such a unique talent, and I know you’re going to keep surprising us all with your creativity and passion.

You have dressed the ear in festive attire. Your dish looks beautiful and it certainly looks scrumptious. What a facility you have to make such a simple product into something special in earth tones and fire😍.
