VEGETABLE STEW.
Each one cooked differently from the other, but all crunchy.
Instead of chopped ham, two slices of Iberian ham, which with the heat of the vegetables sweats and dries leaving its pleasant flavor to the vegetables
A little bit of everything, Navarrese style, with extra virgin olive oil and salt as the only dressing.

what a delicious stew! you can see the care in every detail: the different cooking processes keep the textures alive and that crispy touch that is so hard to achieve if you are not attentive. The Iberian ham placed whole, letting the heat transform it and perfume the vegetables… a half-court goal! 🧡 Do you dare to tell us what technique you used to preserve the colors and cooking points so well? This dish has the soul of tradition and the precision of a chef! 💫

that stew looks great, Mercedes! We’re so glad you shared this dish with the community.🫶🏼 Getting each vegetable crispy without overdoing it is quite a challenge. And that touch of Iberian ham sweating on the vegetables… a very well thought-out idea to add flavor without overloading the dish!
The Navarrese style with only olive oil and salt lets each ingredient speak for itself, which makes everything feel very natural and tasty. Which vegetable did you like the most in terms of texture or flavor? Sometimes one surprises us more than others. Thanks for sharing it with the community.❤️Level:Scoolinary Team

What a beautiful and vibrant vegetable stew! 🌱 I love how each ingredient is treated with such care, from the Romanesco to the artichokes, and the touch of Iberian ham sounds like a perfect addition for extra depth. It’s so great that you’re using the cooking water for other dishes — that’s true resourcefulness! I can just imagine the lovely flavors and textures in every bite. This is the kind of dish that’s simple, but full of love and wisdom in every step. ❤️
