      Garlic soup with torrija

      #PlatingChallenge

      Amateur profile

Ingredients: Homemade ham broth (leek, carrot, turnip, celery, parsley, ham bones, chicken carcasses) garlic, bread crumbs, eggs, salt, sweet paprika and extra virgin olive oil.

I have wanted to make this recipe ever since I took the ‘Spanish Home Cooking’ course. And well, as the presentation is in the form of torrija, it had to be these days. To be honest, I didn’t plan to make it for the challenge… but once it’s done, I think it’s beautiful.

It is one of the most traditional dishes of Spanish cuisine, garlic soup or Castilian soup, which, as an innovation, is prepared using another Spanish classic, the torrija. That said, I don’t know if someone who is not Spanish will be able to understand it.

I’ll tell you, for those who don’t know it. Garlic soup is very traditional, it is a dish of humble origins, very humble… capable of feeding the whole family and warming you up with just water or broth, stale bread, olive oil, garlic, paprika and egg. The plating is not something that is taken into account for this dish (just Google ‘sopa de ajo’ or ‘sopa castellana’, see the images, and check it out).

The secret in this case is that the broth is full of Iberian ham flavor. Instead of adding bread, I have prepared a torrija, previously soaked in the same broth. Well fried and crunchy garlic. And instead of adding egg to the broth, I have placed the yolk on the torrija. As the whole is very hot, when you break it to eat, the yolk floods the broth with creaminess.

It was delicious, I invite you to take a look at the course, because it is wonderful. Just like Pepa Muñoz.

Aaa you finally submitted it! 😍 You know how long I’ve been waiting for you to post – and it was worth EVERY second of waiting. It looks absolutely beautiful, and you know I’d dive into that bowl with a spoon right this moment! 🧄🍞🥚 This is so you – taking something traditional and turning it into pure art. So proud of you, all the way to the sky! ❤️

@lanamihajlovic ayy, sis, thank you very much 🥰 Yes, I really wanted to do this challenge and I’m going to upload some more dishes these days, some of them are already done, just needing to select photos and another one I still want to do. I’m like the bad students 🤓, who study the last night before the exam or submit the work at the last minute 😅 …I think I need to feel the pressure to work well 😂

@undefined To be honest, we’re not so different in that regard. For me, it’s the same—when I’m confident in something, I go with the flow. But when I’m uncertain, I turn into a complete geek 🤓. I didn’t approach this challenge as much as a competition, but rather as a personal one. Sure, I could have cooked these dishes without applying, but if I hadn’t applied, I wouldn’t have pushed myself to practice as much. 😂 That’s when you really know all your demons. 😅

@lanamihajlovic #twinsisters you read my mind! 😃 is just that. I love cooking, but I’ve realized that the challenges are what are getting me to explore beyond the recipes I usually make, to get out of my comfort zone, to want to go beyond… and that’s fabulous. And it’s a gift to do it in such good company like yours or other scoolinars and a team as great as @soldamiani or @sussan_scoolinaryteam 🫶

@beatriztorijagmail-com I completely agree. Tomorrow I will publish a post that @sussan_scoolinaryteam inspired me…and soon there will be a creative post that only @soldamiani knows about but she doesn’t know everything either 😂

I found it super creative and at the same time very respectful of the roots of the dish. The yolk on top of the torrija not only looks great, but adds a creamy touch that must make every spoonful a delight. I was very struck by how you achieved that balance between traditional and visually appealing.

did you have to do any testing before you got the yolk just right on the torrija without overcooking it? Sometimes that right spot can be tricky, especially if everything is too hot.
Thanks for joining the challenge with this incredible proposal, your dish has a lot of personality and is sure to awaken memories in anyone who tries it! ❤️

@sussan_scoolinaryteam Muchas gracias, Sussan.

what a wonderful reinterpretation, chef! 👏✨ This garlic soup with torrija is an example of how you can elevate traditional cuisine from the utmost respect. You have managed to make the humble look sophisticated without losing an ounce of authenticity. visually, the plating is sober but striking: the contrast of the golden brown of the torrija with the unctuous broth and the crunchy garlic floating like treasures, is a postcard that thrills. And that shiny yolk, perfectly placed, is the heart of the story – the promise of creaminess in every spoonful. The photography is accompanied by a soft light that enhances the warm tones and makes the dish look honest, appetizing and very professional, even if it is amateur (and many of you are not even an amateur!). The vintage touch of the spoon, the neutral background… everything helps the dish to be the protagonist 💬 Did you try to let the torrija rest in the broth before serving or did it go straight to the plate to preserve texture? Thank you for joining the #PlatingChallenge with so much love and gastronomic culture. and yes: the Spanish Home Cooking course with Pepa Muñoz is a treasure! share your work on social networks and tag us: @scoolinary_es & @davidjrickett 🥣🇪🇸

@soldamiani muchas gracias, Sol.
