Pistachio Cookies
I have based myself on the Peanut Butter Cookies recipe from Anna Gordon’s American Cookies Course but I have made them in Pistachio version, using pistachio paste and chopped pistachios instead of peanut butter and chopped peanuts.
Some I have filled them, once out of the oven, with a strawberry paste 🍓 that I had made from another elaboration.

Pistachio with strawberry paste sounds like something one should try at least once in a lifetime… and then repeat several times. 😍
I liked that you took advantage of the base peanut butter recipe but made it totally your own. Those kinds of twists are what make a recipe memorable.
Also, that crunchy touch of the pistachios on the outside and the juicy strawberry core is a surprise that no one sees coming, but I’m sure no one complains. Did you cook the strawberry spread or is it a quick jam type with fruit and a touch of lemon?
they look like the kind of cookies that mysteriously disappear from the tray! (Just in case,I didn’t go 😅) Which version did you like better: with or without filling?
Thanks for sharing it with the community.Level:Scoolinary Team

@Sussan Estela Olaya muchas gracias Sussan.

These sound absolutely irresistible! 😍 I love how you took inspiration from a classic and gave it your own twist—pistachio paste and chopped pistachios already sound dreamy, but that touch of strawberry paste? That’s next-level creativity. 🍓💚 The textures, the colors, the flavor contrast… everything about this screams elegance in a cookie. Can almost hear the crunch and feel the melt-in-the-mouth moment! Bravo! 👏🍪

🍪 What a wonderful reinterpretation! I love how you started from Anna Gordon’s recipe to give it your personal touch with pistachio – which has that deep, elegant, almost mysterious flavor – and you also topped it off with a strawberry fruit heart… pure pastry alchemy!
That mix between the unctuousness of the pistachio and the acidic freshness of the strawberry sounds like a bite full of contrast and texture. Can you imagine how it would look with raspberry or orange as well?
Thanks for sharing this oh-so-yours version – if you share them on Instagram, don’t forget to tag Chef Anna Gordon @thegoodbatch and @scoolinary! I’m sure you’ll love seeing how your recipe inspired something so delicious💛Level:Scoolinary Team

@Sol Damiani muchas gracias Sol.
