Vegetable Harmony with Roasted Pumpkin Parmentier

      #PlatingChallenge

      Profile: Amateur

When I received my new plate, I imagined a painter’s palette where the oils are placed in harmony, where the brush picks up a little bit of each color to give that brushstroke on the canvas creating something that only you have in your head. Some time ago I used to paint ..

Some time ago I thought that diets, if they are prescribed by a doctor, are difficult to follow… My husband, every time I put him a plate of boiled food he would say to me: I have to eat this so sad?

The story changes with this dish like a painter’s palette with cooked vegetables accompanied by roasted pumpkin parmentier with asparagus, asparagus, tajete petals, parsley oil, Parmesan spiral tuile, blackberry salt that I make myself and parsley powder.

Do you think it’s sad? I don’t think so 😉

wow, Maloles! This dish looks like something out of an edible art gallery. 🎨

What a beautiful way to turn the typical “diet food” phrase on its head. There is joy, color and love in every bite here! And that parmesan swirl…is it legal for something so pretty to eat too? 😌

I had a good laugh at what you told about your husband with the sad boil, poor man! But now I’m sure he applauds you when he sees that veggie popsicle.

were you inspired by any paintings or artists to assemble the dish like that? I’m curious about that touch of blackberry salt and the parsley powder, do you make them from scratch?

@undefined Muchas Gracias Sussan.

This harmony is simply wonderful. You’re right, diets have always been sad, and in general vegetable dishes too. As rich and versatile as they are. Here you elevate them to another level. With what you are telling us about your husband, I can imagine him even skimming on this dish so that there is not a petal left 😊. A 10, in capital letters !!!!

@undefined Gracias Beatriz!

This sounds like a dish painted with intention and soul — definitely far from sad! The roasted pumpkin parmentier and those thoughtful details like the Parmesan tuile and blackberry salt show so much creativity. I love how you turned a ‘diet’ plate into something truly joyful and artistic!

A dish full of harmony and flavors, as you say, nothing boring, it is even embarrassing to eat it because of how beautiful it is.

A dish with a lot of expressiveness and talent, congratulations

@soldamiani Muchas gracias Sol!
