As promised, here is the tandoori chicken, it triumphed!

By the way, don’t miss Anjalina Chugani’s Indian cooking courses. There are three of them, and all of them are great, even if the tandoori chicken is not featured.

That vibrant red color and the brightness of the marinade make it look super juicy, and with that fresh cilantro on top says it all! Did you use plain yogurt for the marinade or did you put your own spin on it with another base?

I applaud you because not only does it look tasty, but it conveys a desire to try it already. And that tip about Chef Anjalina’s courses is pure gold. Thanks for sharing it with the community. ☺️

@sussan_scoolinaryteam Yes, I always use plain yogurt, or Greek yogurt, even creamier… but always plain. It was super yummy. Truth is, it’s a recipe I make quite often, and I already got the hang of how many spices to add, to get it just right. 😊

@beatriztorijagmail-com How nice that you have already found the perfect balance with the spices! The touch of Greek yogurt must give it a spectacular creaminess. It’s great to see how you’ve gotten the hang of the recipe and enjoy it so much. I imagine that trick with the spices makes it just right every time. Once again thanks for sharing. ❤️

@undefined of course… sharing is living!
-The first thing is to make garlic and ginger paste, essential for countless recipes of Indian cuisine. It’s simple: grind with the blender garlic and ginger peeled. I add a pinch of water, just enough to make it easier to grind. It should be a paste.
Then in a large bowl I put the dry spices from the marinade: garam masala (1 teaspoon), chili powder (1 pinch), freshly ground black pepper (half a teaspoon), casthuri methi (or fenugreek) (1 tablespoon), turmeric (half a teaspoon), tandoori (1 teaspoon), salt and red coloring (half a teaspoon).
-Then I add the wet ingredients for the marinade: 2 tablespoons of garlic and ginger paste, the juice of three limes and a natural yogurt (plain or Greek, but never sweetened). Mix everything well.
-Put in the chicken pieces well cleaned, I usually make thighs, but this is your choice. If the pieces are large, make cuts on the meat, so that the marinade penetrates well. Stir well so that all the chicken is well impregnated.
-Cover and let it rest overnight.
-Cook it the next day. I usually do it in the oven at 190°C for about 40 minutes, although the time will depend on the pieces of chicken and the oven, it is best to keep an eye on it. It can also be cooked on the grill or barbecue.
-I serve it with a little chopped coriander on top, but it is optional.
            😉
