Today I decided to prepare one of my favorite Mallorcan dishes: tumbet, this time with egg.
For those who do not know this dish I will say that it is a traditional Mallorcan dish that is prepared with vegetables from the garden: potatoes, onion, bell pepper, eggplant, garlic and tomato sauce.

I like to think of it as the Mallorcan brother of ratatouille, as both have a vegetable and tomato base.
Generally, tumbet is made by frying the vegetables before layering them with the tomato sauce. But I prefer to grill them, because I use less fat and get a lighter and healthier version. Then, I alternate them with the sauce, as if it were a lasagna, and finish cooking it in the oven. 😋

Tumbet is such a beautiful, vibrant dish, and your take on it sounds absolutely delicious! 🌱🍅 I love that you’ve given it a healthier twist by grilling the vegetables — it’s a fantastic way to keep all those fresh flavors while cutting down on fat. The egg adds such a nice touch too! Definitely a lighter, yet still comforting version of a Mallorcan classic.
