Being in these lands, I discovered a dish that “is a delight”. A 100 year old egg. It is called centennial egg and is made by preserving a duck, chicken or quail egg in quicklime, clay, ashes and various minerals for several weeks or months. When the covering is removed, the white appears dark in color and the yolk is greenish. The aroma is of a cheese that has been matured for a long time.

In China they eat it alone; here in Vietnam, they add chives, shrimp powder and some pickled vegetables in vinegar.

Only for the adventurous at heart!

how interesting to discover these delicacies that exist in the world! In Peru we have a large tusan (Chinese-Peruvian) community that arrived in the 19th century, and thanks to them, in Lima’s Chinatown you can find these eggs, which we call “millenary eggs” or “100 year old eggs”. I remember when I was studying gastronomy, about 20 years ago, my Chinese cooking teacher took these eggs to class. Just by seeing their color, texture and that peculiar aroma, I couldn’t bring myself to try them, so I understand perfectly what you felt when you tasted them.

I love that you share with us how amazing your trip was, were you surprised by their flavor or was it just as you imagined?

how brave of you to venture into new flavors!

            • Not many people can accept the taste of canned eggs, including me, but my partner really likes the taste of canned eggs. He always adds a preserved egg to his lunch to boost the flavor and nutrition of the day’s lunch dishes. I am used to cut these preserved eggs into small pieces, add minced pork and chives to cook porridge, or cut them into wontons with pork filling and eat them after cooking. It would be a nice delicacy.
