Reviewing photos… I came across this dish that I made some time ago. It’s potatoes with blood sausage and green beans. It is one of those recipes that the great chefs shared during the confinement, during the pandemic… and I kept the idea.

For those of you who are from abroad: potatoes a la importancia are a very traditional preparation of Spanish cuisine, now a bit out of fashion, I would say. In the old days it was eaten more, because it was a very economical dish, and satiating. Thick potato slices are cut, dipped in flour and egg and fried. Then they are stewed in a broth, with a majado (the blood sausage and asparagus are not part of the traditional preparation).

Well, the fact is that I have only made this recipe once, although we liked it very much. I think the reason is that, at the time, I did not write down the preparation. I have a file with my recipes (part manual in a file, and part digital) where I write down those recipes that I want to remain in my recipe book (my husband calls it “the little book of all the knowledge”).

I’m afraid that there are many recipes that, although I like them, I forget them because I don’t write them down. Does it happen to you?

This is an interesting twist on the traditional recipe Beatriz.

It’s been a while since I made those potatoes and they are delicious… I also have a handwritten notebook from when I started cooking …that notebook is pure gold with all my family recipes. Yes, of course I have to write down everything, what I used to write down and what I write down now on the computer. In my Evernote app I have I think they already exceed 2500 😅 I forget everything 😂.

@loles-mhotmail-com totalmente. A mi me gusta tener bien apuntado incluso esas recetas que haces con los ojos cerrados. Hoy no necesito consultar para hacerla… pero dentro de unos años… vete a saber, mejor que esté bien registrada

I make them from evening to evening, but only potatoes, I learned them from my mother

Such a wonderful rediscovery! 🍽️✨ ‘Patatas a la importancia’ may have fallen out of fashion, but classics like this deserve a comeback—especially with your delicious twist of blood sausage and green beans! I totally relate to forgetting recipes if I don’t write them down. Your ‘little book of all the knowledge’ sounds like a treasure! 📖👨‍🍳 Do you think this dish will make it into its pages now? 😊

@lanamihajlovic siiii, I want it to be in “the little book”… but I have to look it up… once a chef shared it on his social networks… if I write it as I remember it, I’m sure I’ll forget some ingredient or some step 😅
