      Here is my Oatmeal Cookie Filled with Caramelized Apple

      I made the base with rice flour and oat flakes. As for the apple, I caramelized it with cinnamon, very little brown sugar and no butter. It turned out very fluffy and with a spectacular cinnamon touch.

        hi Hind! ☺ What a wonderful combination! 🍎🌾 That base with rice flour and oatmeal sounds super light, and the caramelized apple filling with cinnamon…ouch, pure autumnal temptation! The decision not to use butter in the filling gives it an interesting twist, more subtle and aromatic.

        Mind you, a little note: the #CookieChallenge closed yesterday, March 30 at 23:59 CET 🕛.

        likewise, a thousand thanks for sharing your creation! We love to see how each recipe bears a personal stamp 🙌

          • @Sol Damiani lo primero que se me ocurrió es hacer una especie de torre con berenjenas asadas, con un hilillo de miel, intercaladas con con patatas cortadas en redondo, asadas y aromatizadas con aceite de oliva y romero😅 En la base de la torre, estoy imaginando una salsa con garbanzos triturados y pimientos del piquillo! En mi imaginación suena bien, ahora no sé cómo quedaría la combinación de sabores🤔! Tendré que probar a ver☺️✌🏻

          I like how you used rice flour and oat flakes, they sure gave it an interesting texture. And that combination of caramelized apple with cinnamon sounds like a hug in cookie form.

          did you find it easy to handle the dough without butter? Because with that filling, it looks like they were super soft on the inside. Thanks for sharing.🫶🏻

          • @sussan_scoolinaryteam La verdad es que han quedado muy esponjosas. Me ha costado un poco darles la forma porque al no tener mantequilla y con los copos de avena, la masa se me abría. entonces lo que hacía era refrigerarlas un poco. Tambien he congelado el relleno para que me resultara más facil rellenarlas

              @hindhasnaoui

              Refrigerar la masa y congelar el relleno suena como un truco excelente para manejarla mejor. A veces, las masas sin mantequilla pueden ser un poco rebeldes, pero encontraste la manera perfecta de domarlas y eso es un extra punto para tí.

              Una vez más gracias por compartirlo.😊

            Your Oatmeal Cookie Filled with Caramelized Apple sounds absolutely delicious! The combination of rice flour and oat flakes must have given it such a lovely texture, while the caramelized apple with cinnamon adds that warm, cozy flavor. I love that you kept it lighter with just a touch of brown sugar and no butter—it’s a perfect balance of indulgence without being too heavy. The fluffiness must have made each bite a dream! 🍏✨

            • @lanamihajlovic Thank you so much!💜 I’m thrilled you liked it. The rice flour and oat flakes definitely gave it a wonderfully soft and fluffy texture. And you’re exactly right; the caramelized apple with cinnamon added such a comforting touch. I wanted something tasty but still a bit lighter, so skipping the butter and using just a hint of brown sugar felt just right. So happy it turned out dreamy! 😊✨
