It always caught my attention that in the east of Spain they made a rice dish that also had chickpeas. With meats (ribs, bacon, black pudding) but also potatoes… I don’t know, my head exploded when I thought they were ‘strange’ ingredients for a rice dish. And I wanted to try baked rice or ‘arròs al forn’. It was a discovery and now I make it often… I love it!

This recipe appears in José María Calogne’s course ‘Varieties of rice and its preparation’ … I don’t know if it will differ much from my recipe, I’m going to find out right now, that I start the course 😉

this baked rice screams “family Sunday”! ❤️

The combination of ingredients is a showstopper, and the whole garlic in the center gives it a great rustic touch. I’m intrigued as to how you managed to get the potatoes golden brown without them sinking into the rice, did you seal them first or did they cook right in the oven?

Tremendous job with the distribution of the ingredients, because each bite sure has a little bit of everything, I’m sure your rice was delicious

        i can’t wait to try it! 😍

Thanks for sharing it with the community.

@sussan_scoolinaryteam yes, it really is a delicious rice, very different from the traditional ones. The potato is lightly fried before placing it on the rice and then in the oven it is toasted a little bit

@beatriztorijagmail-com What a great trick, Beatriz! That pre-sealing of the potatoes sure gives them that perfect browning and incredible texture. Those details make all the difference and elevate the dish even more. Thanks for sharing your secret with the community, I’m sure more than one will put it into practice. ❤️

        • how delicious! It reminded me of a stew my mother used to make “Cascote”, with chickpeas, rice and beans. I saw your photo and smelled the kitchen of her house…..

By the way, I forgot to say that it is traditionally made in an earthenware dish, but I don’t have that size and that’s why I used paella

@undefined yes, that’s right, with broth. When I have homemade broth, which I like to have frozen, the rice is crazy rich. And if I don’t use store-bought, but caldo de cocido always. A Valencian once explained it to me like this: “in the inland you make cocido in winter, we can’t stop making rice, this is our cocido”. The truth, I loved the argument

This dish looks fantastic! 🤩 All those ingredients – from the meat to the potatoes and chickpeas – come together perfectly to create such a rich and flavorful dish. It’s wonderful to see how much you enjoyed discovering something new and how much you love “arròs al forn.” I’m sure the course will further enhance your skills and make the dish even more perfect! Your patience and love for food are clearly visible in every bite. 🍽️✨

@lanamihajlovic 😍 thanks Lana! Yes, sometimes I look for recipes that I usually make, to see if they are included in some course. It doesn’t seem very logical, if at the end of the day
l after all they are dishes that I already know… but I’ve realized that this way I discover interesting tricks and variations 🤩.
