Wild asparagus, low temperature egg and potato parmentier.

This is another of my dishes where asparagus is the protagonist. This time accompanied by low temperature egg, over a potato parmentier. All finished with sliced garlic that I grilled together with the asparagus, chili strands and drizzled with early EVOO from my land.

Nothing like cooking with seasonal products ❤

        maloles, what a delicious combination!

The low temperature egg with that creamy texture must make every bite feel even more comforting. And that touch of laminated garlic and chili strands, seems to tie everything together with a little bit of intensity just right! 😍

how do you get the parmentier to have that silky consistency? It looks incredibly well worked.

Thanks for sharing this delicious creation with the community.🙌🏻

@sussan_scoolinaryteam Gracias Sussan.

what an elegant dish full of intention! 🌿🍳 The wild asparagus shines with that just-right point of plancha and the touch of the laminated garlic-a subtle but powerful accompaniment. The low-temperature egg over the parmentier is pure pampering…and that early AOVE is the aromatic cherry that brings it all together.

how did you time the egg? Because getting that perfect yolk to embrace the parmentier is an art.
