      Vegan Cookies Version 2.0

Same recipe as the ones I posted yesterday, improved.

In this case they take instead of Chia, ground and hydrated flax seeds.

I have made 2 versions to compare.

One version with oat flour, raisins and nuts and the other with wheat flour and chocolate chips.

With the oat flour they are more rustic, fluffier and the oat flavor combines very well with the raisins and walnuts. I left them a little longer in the oven and they are very tender.

With the wheat flour, they are a little flatter and since the flour has a more neutral flavor, the chocolate has more prominence.

      Both are delicious.

I can tell you thought carefully about the ingredients to compare textures and flavors. The combination of oatmeal with raisins and walnuts sounds comforting, while the wheat flour and chocolate version looks like a pure sweet treat. I’m intrigued by the difference in texture, did you notice any change in moistness or baking time between the two versions.

I like that you are always willing to improve or give us a second option of your recipe, that says a lot about your effort and willingness to learn.

Also, changing the chia to hydrated flax is an interesting move, good on you! 🙌🏻

        Thanks for joining the challenge.♥️

Mercedes, thank you for presenting these two versions of your cookies, it is amazing to see how you keep experimenting and looking for new versions of the same recipe, that says a lot about you and the desire to learn. 🙌🏻

I must also say that the presentation is very nice, the cookies stacked like this and with their little rope looks divine, just ready to give as a gift.

          Thanks for joining the challenge.❤️

These look absolutely delicious! 🍪✨ I love how you’ve tweaked the recipe for even better results. Both versions sound amazing—oat flour with raisins and walnuts for a rustic vibe, and the wheat flour with chocolate chips for a rich, decadent treat. Can’t wait to try both! 😍
