Squid in oil. This is a typical specialty in Almería. Since I tried it there (and of course I went into the restaurant’s kitchen to be told all about it) I do it frequently. It is very simple. It’s actually confit squid, with lightly crushed garlic, black peppercorns and bay leaf. And covered with olive oil. The whole squid, well cleaned, salted… and the bigger the better.
Over very low heat, covered for 15 minutes, turn over and cook for another five minutes, uncovered. And ready.

this is a master class in simplicity done right! 👩🏻🏫
Cooking over low heat in oil should leave the squid with an incredibly tender texture, and that touch of garlic and bay leaf is sure to make it even tastier.
One thing that strikes me is how you infuse the oil with aromatics – do you reuse it later for another preparation or does it disappear as soon as the dish is served?
There is definitely knowledge and experience behind every step. Not just anyone can make something so simple have so much personality on the plate. 👏🏻👏🏻👏🏻

@sussan_scoolinaryteam ¡Qué buena pregunta!

This dish sounds absolutely amazing! The simplicity of the confit method with garlic, black pepper, and bay leaf really lets the squid shine. I can imagine how delicious it must be, especially after learning the recipe straight from the kitchen in Almería. Definitely adding this to my must-try list! 🦑🍽️🌿

@lanamihajlovic siiii, if you have the opportunity, do not hesitate to do it, it is delicious. A lot of oil is used, but then you take advantage of it, for other fish dishes.
