      BLACK RICE WITH BABY SQUID.

The squid are in two textures, first cut and sautéed and the legs fried in oil and put as decoration.

I fried some chopped onion, garlic, grated tomato, a little bit of toasted flour, bay leaf, wine that I let evaporate and a little bit of fish broth with the ink.

I have put underneath alioli to give a little grace to the dish

Everybody knows how to make the rice.

      Then plate and ready

A beautifully crafted dish! The contrast in textures, the richness of the squid ink, and the depth of flavor from the wine and broth make this truly special. The alioli underneath is a genius touch—elevating every bite. Would love to try this! ❤️

This combination of squid in two textures gives it a touch of playfulness and contrast that makes it even more interesting. In addition, the aioli underneath is a key detail to round out the flavors.

how do you get the legs so crispy without losing juiciness? You can tell there is a good management of times and temperatures. This black rice not only looks amazing, it sure tastes even better!!!. Thanks for sharing it with the community.🫶🏻
