#CroquetaChallenge I came up with the idea of preparing some croquettes inspired by the classic huevos rotos con jamón (scrambled eggs with ham).
For those who don’t know this dish, huevos rotos consist of fried baked potatoes with ham and a couple of fried eggs on top. A simple but delicious dish.
In my version, I prepared the croquettes with potatoes cooked in ham broth, garlic and bay leaf. And thus enhance the flavor. I topped them with a quail egg and, as a personal touch, I added a little aji criollo sauce on the base.

Pdt. I got inspired and mixed the techniques from the course: ham croquettes and cod croquettes. 😋

great job on those croquettes! The crunchy texture on the outside and creamy on the inside looks spectacular, and the egg of gives them a touch that makes them shine even more.

did you make the bechamel base with just milk or did you use a base to enhance the flavor? Because with that filling they sure turned out great.

Don’t forget to join the #croquetachallenge and tell us a little more about the recipe and the process, you can edit your post if you like.

I’m sure more than one of you will want to try making them at home, they look irresistible!

What a tip of combination… that quail egg yolk, when it breaks in your mouth it must be a marvel 😋😋😋😋.

tremendous interpretation of the classic! 🔥 Those flavors well enhanced with the ham, garlic and bay leaf broth make these croquettes an umami bomb. And that little quail egg, pure art in miniature. I like the twist of the aji criollo bell pepper in the base, how do you balance the spiciness with the rest of the ingredients? 👀
