      #CROQUETACHALLENGE

I have used some roasted chicken I had and made chicken and pine nuts croquettes with a batter of nachos and almonds. Before serving I have painted them lightly with honey and I have accompanied them with a honey and mustard emulsion

And what would recipes be without a story to go with them? Here is mine!

      The taste of memories

In the old kitchen of the house, where the tiles kept the aroma of the stews of yesteryear, Maialen stirred the bechamel sauce with infinite patience. There was no written recipe, only the echo of her grandmother’s words, which still resonated in her memory:

“Croquettes are not just food, they are a caress in the mouth, a whisper of childhood, a bridge between yesterday and today.”

That night, the rain beat against the window with the same cadence as the swaying of the spoon in the pan. In the gloom of the kitchen, illuminated only by the warm light of the hanging lamp, Maialen felt the memories mingling with the aromas

On the table, the ingredients waited their turn: shredded chicken, toasted pine nuts, a pinch of nutmeg. Maialen plunged her hands into the dough, feeling its softness between her fingers.

Outside, the storm raged. Inside, the aroma of the bechamel, thick and perfumed, began to envelop everything, weaving a warm and comforting spell. She remembered her grandmother’s hands, agile and patient, shaping the croquettes one by one, as if each one were a talisman against oblivion.

But that night, Maialen wanted something different. Not just croquettes, but a story woven into each bite.

Instead of breadcrumbs, she crushed natural nachos, remembering those youthful afternoons when she shared laughter and secrets over a bowl of crunchy nachos. He added chopped almonds, evoking the Christmas cookies his grandmother baked with expert hands. And when the croquettes came out of the oil, golden and crispy, he brushed them with a veil of warm honey, as if sealing an ancient incantation.

She prepared the honey-mustard emulsion, whisking it as calmly as her grandmother used to tell her stories. The sauce glistened on the plate, smooth, golden, with a perfect balance of sweetness and character.

She picked up a croquette, dipped it in the emulsion and popped it into her mouth. The crunch was immediate, followed by the smoothness of the béchamel, the sweetness of the honey, the slight bitterness of the mustard and the warmth of the pine nuts. An instant suspended in time.

He closed his eyes and, for a moment, he felt her there. Not in his memory, but in the tangible reality of his kitchen, in the echo of the rain hitting the window, in the aroma wafting through the air.

Because the real secret of those croquettes was not in the recipe. It was in the story they told, in the memory they awakened, in the way a simple bite could make the past and the present merge in the same instant.

The real secret was not an ingredient, but the love with which the memories were cooked. And in her kitchen that night, her grandmother was still alive.
