Hello Family, here I am with my mushroom croquettes and mushrooms and mushrooms.

I have chosen an assortment of forest mushrooms and dried mushrooms. I have hydrated them and I have saved the broth to use it also for the béchamel.

I fried a small onion in equal parts of EVOO and butter. I added garlic, fresh parsley, the mushrooms and then the flour. I stirred everything until the flour browned a little and then I added the milk and the water released by the mushrooms when they hydrated. I cooked the bechamel, stirring constantly, for about 20 minutes, until the raw flour flavor became an explosion of mushrooms and mushroom flavor and the bechamel began to detach from the walls of the pan, at this point I left my bechamel to cool, put it in the fridge and the next day I have already breaded my croquettes.

I’ve done it first with flour, boleando and shaping the croquettes, then egg and finally the Panko (I’m in love with the Panko, there is no way that I open, using it.) And ready, to fry them use one part olive oil and two parts sunflower oil, I do not want the flavor of the oil I cover the flavor of the mushrooms. Here is the final result.

        • I don’t know why I don’t see the photos as I have put them in order? Maybe I’m not doing something right when posting.

What a great job with the béchamel sauce, achieving that point where it comes off the pan without being too thick has its trick, did you let them rest at room temperature for a while before frying them or did they go straight from the fridge to the oil?
Panko is always a hit for the batter, it gives it an extra texture that makes the first bite even more interesting. 🤩

If one day you want to vary, you could try with a mix of panko and some dry grated cheese, to give it another nuance without overshadowing the flavor of the mushrooms. great choice of ingredients and technique!

            Thanks for joining the challenge.🙌🏻

            • i have to say thank you@sussan_scoolinaryteam. Well yes, when I take the bechamel sauce out of the fridge I leave it for a while so that it is tempered, while I prepare the flours and eggs. The difference in temperatures, hot and cold, will open when frying, so half an hour of rest.

Wow, these mushroom croquettes sound absolutely delicious! I love how you’ve used a mix of forest and dried mushrooms, and the broth from the mushrooms must add such an incredible depth of flavor to the béchamel. The combination of EVOO and butter for frying the onion sounds perfect, and I can already imagine how amazing that mushroom explosion in the béchamel must taste! Panko coating is such a great touch for extra crispiness—I’m with you, it really makes a difference! Definitely bookmarking this recipe to try soon. 😋🍄

¡Vaya obra maestra croquetera! 🧑‍🍳🔥
