Lemon flavored egg whites sponge cake

I had 4 egg whites left over from a baking and this sponge cake was their destiny.

I whipped the egg whites until stiff with a little lemon juice. Then I emulsified oil, milk, sugar, flour, baking soda and lemon essence. Once it was well blended, I mixed it with the egg whites with wrapping movements.

I put it in a greased mold and baked it in the oven at 180ºC for 30 minutes. Then I made a low-sugar glaze (that’s why it didn’t come out white) with which I sprinkled the top of the cake and finished with lemon powder. A few slices of skin and dehydrated slices have given the final touch to a cake full of flavor and super fluffy that yesterday we embraced the alma❤️

Maloles, your cake looks super fluffy and that touch of lemon sure gives it an incredible freshness. Does the frosting end up absorbing into the crumb or does it leave a firmer layer on top?

The dehydrated lemon slices look great in the decoration, they give it a rustic feel that matches perfectly with the shape of the mold.

        Thanks for sharing.♥️

@sussan_scoolinaryteam Gracias Sussan.

This lemon sponge cake looks like a real wonder! I can imagine it being perfectly light and delicious, just the way I love it. The low-sugar glaze and lemon powder surely give it a beautiful finishing touch, and the dried lemon slices are the perfect detail. The name “embraced the soul” is the perfect description for this beauty! 😍🍋
