A bit of innovation for this #CroquetaChallenge

This is a thai croquette filled with a rich and creamy chicken curry, which is eaten just like a ssam.

But let’s take it one step at a time. I started with a stir-fry of finely chopped spring onion (including its green stem), garlic and ginger, in butter, over low heat.

Once the vegetables were well poached, I added the chopped chicken and sautéed it. At this point I added a pinch of fish sauce.

I added the flour to make a roux. I worked the mixture for a few minutes. After this time I added the coconut milk and chicken broth (a proportion of 20%), a little red curry paste and a pinch of chili powder. I cooked on low heat for about 15 minutes or a little more.

I transferred the dough to a bowl, wrapped it in foil and let it cool and rest overnight.

When it was time to make them, I dredged the croquettes in flour, beaten egg and breadcrumbs with a little ginger and galangal powder.

The frying is normal, but I have opted for light olive oil.

When serving, in a lettuce leaf with a sprig of cilantro. They can be served with a sauce, such as sriracha or similar.

I had never made them before and I liked the result very much. I’ve been cautious with the flavors… but I think next time I’ll spice it up a bit, maybe I won’t use one of those @lanamihajlovic ‘s killer chiles, but I’ll use a pinch more of joy.

Wow sister, what an innovative take on croquettes! 🌶️ The Thai-inspired twist with the creamy chicken curry filling sounds absolutely mouthwatering. I love how you’ve balanced the flavors so thoughtfully, and the idea of serving them in lettuce leaves with cilantro gives such a fresh, vibrant touch! 🌿 I can already imagine how deliciously crispy they must be on the outside, with that rich, flavorful filling inside.

And about those killer chiles-I’m just over here pretending to be innocent while silently plotting the next fiery challenge! 😈 Maybe next time we can throw in a little extra heat and really give those taste buds a run for their money! 🔥

@lanamihajlovic hahahaha I can’t wait to see what you come up with with those little bell pepper devils. Me, I’ll put a little more spice next time I make these croquettes, but without going overboard, I don’t want my family to have to bury me and put on the epitaph: “died killed by a chilli” 😅

@Beatriz Torija Haha, Beatriz, I can’t wait to see how your spicy croquettes turn out! Just the right amount of kick, though – we don’t want any tragic chili-related epitaphs on our tombstones!

As for me, if I were to have an epitaph, it would probably read: “Died because she never slept, 24 hours a day just wasn’t enough.” 😄 But hey, it’s not our time yet, we still have a lot of cooking to do before we leave, and when we leave, we’ll leave in style 😎

@lanamihajlovic hahaha no, it’s not our time, but now I can’t stop thinking about epitaphs: “here I wait for you” or “watch the oven I’m roasting a chicken” 🤣🤣🤣🤣🤦🏻‍♀️

The combination of red curry, coconut milk and chicken sounds brutal, and also the detail of serving them on lettuce gives it a fresh and different touch.

I love how golden brown and crispy they look 😍.

If you ever wanted to give them an extra contrast, you could try a quick pickled carrot or red onion to put on top, but as they are, they already make you want to try them right now.

Thanks for joining the challenge and showing us your delicious croquettes. ❤️
