Black Tea Croquettes with Cardamom and Cinnamon, Roasted Pumpkin and Candied Orange.
I opened the fridge to see what I could do, and an unruly pumpkin called out to me, jumping around, saying it was cold. So I took it out of there and put it in the oven to warm it up.
The onion and butter, not seeing their pumpkin friend, asked to join her in whatever dish she was going to make and went to the pan.
While the pumpkin was roasting and her friends were poaching, a sachet of tea was sitting in the cupboard begging to be used. So I prepared it.
Suddenly, the flour was heard, screaming and jumping around the kitchen, and inadvertently stumbled and ended up in the pan. She started screaming, “I’m burning! The milk, which was nearby, heard her and came to her aid, and after her came the tea.
After rescuing the flour and to enhance the flavor, salt, black pepper and turmeric joined in.
Then followed the pumpkin, already roasted, chopped and ready to be used.
When everything was almost ready, the candied orange jumped into the pan.
Once the dough was ready and after passing through the cold, I formed little balls with it and after a layer of flour, another of egg and a last one of breadcrumbs, to fry and to taste it.
To present them, pumpkin cream on the base and on top a dot of the same cream and a strip of candied orange peel.
To make them I based my recipe on the ham croquettes. They are very creamy and delicious but the tea must have escaped from the pan.
I used half tea and half milk.
For the next one, I will try to make them with tea only or I will infuse them in the milk to give them more presence.

Empezó a gritar ¡Qué me quemo!

what a beautiful story! You reminded me of María Elena Walsh, do you know her? That way of giving life to the ingredients and making them protagonists is pure art. Not to mention the combination: black tea, cardamom, pumpkin and candied orange… an opera of flavors in every bite! 🎭
I kept thinking about the tea that escaped from the pan 🫖💨, do you think infusing it in milk would give it more presence or maybe a touch of powder would help set it better? Share your photo on networks and tag us @scoolinary_en and @chemasoler_chef!

@Sol Damiani muchas gracias Sol.

It’s nice to read something like this, it almost feels like the ingredients have a life of their own just as you say Sol. How was the texture of the croquette with the pumpkin and candied orange?
It is impressive the quality with which you present each dish, exceeding expectations greatly. The combination of flavors is risky and original, and the presentation with those touches of cream and candied orange peel gives it a perfect closure.
We are happy that you are joining the challenge with this proposal, what a great way to bring something different! 👏🏻👏🏻👏🏻Level:Scoolinary Team

This post is truly a masterpiece! ❤️ I love the way you brought every ingredient to life, as if they each had their own role in this culinary performance. The combination of cardamom, cinnamon, roasted pumpkin, and candied orange sounds like the perfect blend of flavors—warm, spiced, and full of character. I’d really love to try making such croquettes myself, they sound like a real treat! I’m sure the next version with tea will be even more fantastic. Thank you for sharing this inspiration, I can’t wait to see what you come up with next! 😊✨
