I just signed up a few days ago in Scoolinary, to perfect my techniques and make new things, I love cooking, but I’ve always been self-taught.
Today I am encouraged to participate in my first challenge with :
-Croquettes of tiger mussel, with a base of mayonnaise from its marinade
I hope it looks great! They are croquettes that have triumphed!

Me acabo de anotar hace unos días en Scoolinary, para perfeccionar mis técnicas y hacer nuevas cositas, me encanta la cocina, pero siempre he sido autodidacta.
Hoy me animo a participar en mi primer reto con :
-Croquetas de mejillón tigre, con una base de mayonesa de su escabeche
(la naranja es rebozada con panko amarillo)
Espero que os tenga pintaza! Son unas croquetas que han triunfado!

Your croquettes look tremendous, and the idea of using the mayonnaise from the escabeche sounds like a masterstroke to me. Also, that yellow panko gives them a touch that makes them stand out immediately. How did you balance the flavor of the mussel without it overshadowing the rest?

Tus croquetas tienen una pinta tremenda, y la idea de usar la mayonesa del escabeche me parece un golpe maestro. Además, ese panko amarillo le da un toque que las hace destacar de inmediato. ¿Cómo hiciste para equilibrar el sabor del mejillón sin que opaque el resto?
Nos encanta tenerte aquí, así que prepárate porque esto es solo el comienzo. ♥️

sussan Estela Olaya hi Sussan , I used natural Galician mussels for the filling and balanced the intensity of flavor with a bechamel whose ingredients were mainly milk and additionally broth from the cooking of the mussels and to give more creaminess a point of cream.
Later I made a mayonnaise with mussel marinade, to give a top of intensity !
@Sussan Estela Olaya hola Sussan , utilice para el relleno mejillones gallegos naturales y equilibre la intensidad de sabor con una bechamel cuyos ingredientes dieron principalmente leche y adicionalmente caldo de la cocción de los mejillones y para dar mayor cremosidad un punto de nata.
Posteriormente hice una mayonesa con escabeche de mejillón, para dar un top de intensidad !
