Ham and chicken croquettes for this #CroquetasChallenge

I followed the recipe of Francis Paniego’s mother’s famous croquettes, with ham, chicken and a creamy bechamel sauce… and Chema Soler’s tricks from his course.

First of all, the bechamel sauce. I started by frying the chopped onion in butter. Over very low heat, so that it poached well. Then, I added the sifted flour and worked the roux over low heat.

After a few minutes, I added milk and homemade broth (the broth made with chicken, ham bones and vegetables). I added it hot, not boiling, but hot, and in several times. At this point I added the chopped chicken. I have also seasoned with salt and pepper.

And over low heat, stirring constantly, about 15 minutes or more. At the last moment, I added the ham.

The dough has rested all night with cling film, so that it does not form a crust.

When it was time to roll, with flour, egg and breadcrumbs. And to fry in extra virgin olive oil a few at a time so as not to lower the temperature of the oil.

This time I have chosen to present them as they are.
