      #CroquetasChallenge

      Cecina and leek croquettes.

First the béchamel sauce. Poché chopped leek with a trickle of olive oil, without haste, so that it is very well done. Then butter, flour and work the roux well. Then whole milk, already hot, little by little. And cook over medium heat, stirring constantly for 20 minutes. Add salt and freshly ground black pepper. A little before finishing, I added the finely chopped jerky. I have chosen to cook the béchamel only with milk because of the powerful flavor of the jerky… and because I have been generous with it.

Chill for 24 hours before forming the croquettes. With flour, egg and breadcrumbs, but not very fine, but a little fatter than usual. I grate it with breadcrumbs. Then I fry it with olive oil.

I love to have cecina served with a drizzle of extra virgin olive oil on top and with raw almonds, toasted in the pan. The combination of cecina and almonds is spectacular. That’s why I served the cecina croquettes with a little bit of almond cream, with extra virgin olive oil, garlic and vinegar… as if it were an ajoblanco, but thick, and just a little bit.

It is the first time I make croquettes with jerky, and they are delicious.

They have turned out very well.

As a curiosity, have you tried to eat the jerky with oil as you say and ground pepper on top, do not see that tipzo

@undefined I have not tried it this way. I have some jerky, because I bought some extra, so I’m going to try it. I’m sure I’ll like it, because I love pepper… a vexes I say that I just need to put pepper in the coffee of the mañana🤦🏻‍♀️ I’ll tell you about it

The leek also gives them an incredible flavor to the croquettes, congratulations 👏 😉 👍

            what an interesting combination! ♥️

The jerky already has character on its own, but with the leek it sure gains an extra point of smoothness. How did the contrast with the almond cream turn out? It seems to me a very well thought out twist, like taking an ajoblanco to a more subtle texture. The browning of the croquettes is just right 😍 and that touch on top makes them look even more appetizing.

We love that you join the challenge and share the result with us, I’m sure you already have the next recipe in mind. 🫶🏻
