      #CroquetaChallenge

These croquettes came up to take advantage of some ingredients that I had left over from another elaboration.

They are goat cheese croquettes with spirulina, dates, walnuts and cayenne.

The spirulina is in the cheese (it was a goat cheese with spirulina) and, in the dough and as decoration, I also used the strands.

In its preparation I used butter, skim milk, a little light cream cheese to give it a little more creaminess and a pinch of cayenne to give it a spicy touch.

As garnish it has pieces of medjoul dates, pieces of walnuts, chopped goat cheese and spirulina strands.

Both the cheese and the strands were added at the last moment, once the béchamel sauce was ready and had lost some of its heat.

They do not contain eggs and are not fried.

I formed them into little balls and passed some through oat flakes crushed a little and others through sunflower seeds also crushed but not completely.

I browned them carefully in a frying pan. I served them with a homemade date sauce and spirulina strands as decoration.

In the photos you can see the freshly made bechamel sauce with the green strands and then once in the fridge with the same strands in blue color, which is a sign that the blue pigment of the spirulina (phycocyanin) has come out

      I hope you like them.

        what an interesting combination!

I like the way you took advantage of the ingredients and made the spirulina not only an extra, but part of the croquette’s identity. And the blue color in the béchamel is an unexpected touch, almost magical. Do you feel that the cayenne enhances the sweetness of the date or does it take more of the limelight?

Thank you Mercedes for joining the challenge with this delicious creation. 🫶🏻

@Sussan Estela Olaya muchas gracias Sussan.

bravo for joining in on the #CroquetaChallenge! 🔥 These croquettes are a splurge of creativity and clever harnessing. The combination of goat cheese with spirulina, dates and walnuts sounds like a symphony of unexpected but perfectly balanced flavors. I love how you played with textures in the batter – did you notice any difference in texture between the oatmeal and sunflower seed croquettes? 🌿 I suggest you share it also on social media tagging us @scoolinary_es and Chef @chemasoler_chef!
