      Salmorejo croquettes

Whenever I make salmorejo, I look at the various ways I can serve it, I had already made it in flans and in blinis, so it occurred to me to try to make croquettes, although without making a bechamel.

So, I thickened the salmorejo a bit with some cornstarch and froze them in an ice cube mold. Once they are completely frozen, I take them out of the mold and coat them in the egg and breadcrumbs mixed with very finely ground walnuts, I coat them two or three times so that they are well sealed.

Then we fry them well and they are creamy like this.

Turning it into croquettes without béchamel is a bold move, and the walnut breading should give it a great crunch. In addition, the technique of freezing in ice cubes is a trick that makes you want to try with other preparations. 🙌🏻

One question: how did you handle the frying so that the inside was creamy without the outer layer browning too quickly.

Thanks for sharing it with us. 🫶🏻

A very risky bet, but if they are good. A triumph.
