Goat cheese and caramelized onion croquettes.

To make this recipe, first I made some homemade caramelized onion that I added to the béchamel together with the goat cheese, which we have previously removed the rind.

I left the béchamel sauce a little more liquid than usual, since it thickens as it contains cheese and cools down.

The breading was with breadcrumbs with a little nutmeg mixed in.

To present them, I put them in a basket of potato chips.

I hope you can see how spectacular they turned out.

Excellent combination of flavors. Your croquettes look very rich and perfectly browned. Good job.

They look great, plus the combination of flavors is spectacular, I know because I make them often.

            thanks for joining the challenge!

The goat cheese and caramelized onion make a winning team, 🎖️y with that touch of nutmeg in the breading, I’m sure the aroma when frying them was irresistible.

I’m intrigued about leaving the béchamel more liquid to compensate for the final texture… How was the process of forming and breading them? Because with a softer dough, that step can be quite an adventure. They look spectacular!
