Smoked Eggplant, Yolk, Pickled and Salted Eggplant Salad

      #TechniquesChallenge

It was love at first sight. The first time I saw this recipe in the course Cocina Mediterránea: Delicadeza, técnica y sabor by Begoña Rodrigo I knew that someday I would make it, but at the time it seemed far away. When @soldamiani proposed me to organize the Christmas Menu for the challenge, I included it in the hope that someone would make it because I thought it was a beautiful main dish. Nobody made it, so I promised myself to make it the first time….

And yesterday I made it! but when I was plating it, I had a problem with the basil oil and it ruined the dish 🤪 Today I repeated it, taking advantage of the fact that I had leftovers from the preparations. I replaced the bonito with tuna that I had frozen. It is super rich, all those flavors that explode in your mouth and take you to the very sky😍.

I enjoyed it a lot and I ‘m happy with the result. Everything comes in this life 😉

As it takes a lot of things, I have copied from the course the process. There are all the techniques used:

      Smoked eggplant

      1. Grill the eggplants for 5 minutes or until roasted.
      2. Cover them at the last moment to get a more intense smoked flavor.
      3. Let them rest for 1 hour before removing the flesh. Season with salt and pepper.
      4. Blanch the basil and set aside.
      5. Grind the eggplant together with the basil, Parmesan and the juice of half a lemon in a food processor.
      6. Whisk the mixture with oil as if it were a mayonnaise.
      7. Add salt and pepper.

      Yolk in brine

      1. Place half of the salt in the base of a container.
      2. Carefully remove the yolks and place on top of the salt.
      3. Cover the yolks with the remaining salt.
      4. Let the salt act for 4 hours.
      5. Wash the yolks with a trickle of fresh water to prevent them from breaking and dry.
      6. Beat with a whisk to obtain a very silky paste

Tartar of Pickles and Bonito (raw tuna cut in mini brunoise, gherkins, capers, seasoned garlic, chives, I have also put chopped pickled red onion)

      1. Chop everything finely, mix and set aside.

Salted fish powder (I have put mojama and cod)

      1. Grind separately each of the fish until obtaining very fine threads. Set aside.

      Basil Oil

      1. Blanch the basil, cool, drain well and blend with the oil and lime juice.
      2. Salt to taste and strain through a cheesecloth to obtain a completely clean oil.

Pickled red onion (I have put it chopped in the tartar and in the final decoration)

Cooking is all about persistence and passion, and you’ve nailed both! The way you describe the flavors makes me want to try it immediately. Sometimes, the best dishes come from a second attempt—when experience meets determination. Well done dear! ❤️

How wonderful, Maloles, great recipe 🙌 That course is the best, isn’t it? It’s perfect. What a pity I can’t reach out from here with a spoon and try some… that oil is pure 💚

@undefined Gracias!

¡No puedo esperar a ver qué crearás después! 😍

                  ¡HERMOSO emplatado!
