This dish looks extremely sophisticated and delicious! The combination of desalinated fish, crispy sweet potato, and salmon caviar creates a perfect harmony of textures and flavors. The addition of chives adds a freshness that rounds out the overall experience. I would definitely love to try this creation! 🍴😊

hi Dario how nice to have you back and that you can share your creations with us! ✨

The play of textures between the tender wreckfish, the sparkling and the crispy sweet potato sure makes each bite super interesting.

Plus, the touch of the salmon caviar gives it a color contrast and an extra marine touch that is sure to enhance the flavor of the fish. How did you handle desalting the wreckfish to keep its texture perfect without losing too much flavor.

            • Thanks Susan, the wreckfish must be left to soak for 2 days and the water must be changed at least 3 times a day… That’s how I did it and it was perfect as the meat is quite strong to the touch and to the liquids, it did not suffer any damage to its structure.

what a pleasure to see you here again, Chef Dario, what a display of technique and elegance in this dish! 😍 The combination of the desalted wreckfish with the softness of the sparkling and the crunchiness of the sweet potato is pure balance of textures. Plus, that final touch of salmon caviar and chives gives it a sophisticated finish full of contrasts. How did you get the sweet potato crisp to have that perfect texture without losing its vibrant color? 🔥
