      Kumquat Orangette

      #TechniquesChallenge

Looking for recipes for my kumquats led me to the course Techniques with Pectinase Enzyme from David Gil and this very special dessert caught my attention. The process has been fun and very new for me. The result is brutal, nothing to do with the traditional confit. Now that I have learned the technique I will make some more since after the confit I have to freeze them. So when I feel like it I will only have to prepare the chocolate and dip them😉.

I put some kumquats peel in very thin strips instead of orange zest.

I made some rice paper wafers to present it, although I also presented it in crockery.

The course is proving to be very special, I still have it in progress.

      Techniques:

1 Impregnation with enzyme solution with syringe for the degraded kumquats

2 Vacuum packing, 12 hours resting time

      3 Syrup

      4 Candied kumquats already degraded

      5 Freezing

6 Bain-marie to melt the chocolate

      7 Dipped in chocolate

      8 Rice paper wafer

I’m thrilled to hear that Chef David Gil’s course is being such a discovery for you, and the process you followed sounds super interesting. That touch of orange zest gives an incredible visual and flavor contrast to the chocolate, it sure enhances the sweetness of the candied kumquat even more.

I like how you presented the rice paper wafers, they give a light and ethereal feel to the plating. What texture did you achieve with the enzyme impregnation.

thanks for sharing this awesomeness with the community and for joining the challenge! 😊

@undefined Thank you Sussan! It has been amazing to make this recipe and the course is wonderful. To your question I will tell you that the kumquat comes out softer but without losing its shape. It’s like eating a bonbon with a soft and rich heart that explodes when chewed! If you have the chance to try it, do not hesitate because it will surprise you.
Now I will continue trying with other fruits since I have the pectinase enzyme. Let’s see how the other recipes of the course go😉.

Muchas gracias. Me alegra que te gusten ❤️
