On some occasion some lost person commented to me that paella was a rice to which you put all the leftovers you had in the fridge. I thought to myself a few expletives that I don’t want to be censored on this, our beloved platform.

When my children were still young, they asked me one Saturday to buy paella for them; I went to the nearest place to buy it to see how they served me rice, rice, rice, rice, a clam, a shrimp, a chicken leg and a pork rib. Nothing appetizing.

From that moment on I started to learn how to make it and, as good seafood lovers, I only started to add seafood, but with the obligatory bacon and peppers. The day came when my children told me why I put so little rice… they didn’t want so much stumbling… Years later my paellas are now more balanced in their ingredients.

Yesterday was my older sister’s birthday and as a gift, we made her much loved seafood paella; U12 shrimp, U20 shrimp, squid rings (I couldn’t find txipirones), mussels, clams, chocolate clam, bacon and red bell pepper.

Clarifications: my grill is small in diameter, so my paella is small in diameter but considerable in height; my sister is crazy about shrimp, so you can see that there is an invasion of shrimp on the top of the dish.

As a snack, we made baguette with garlic butter and baked provolone cheese; I forgot to take a picture of the breads already portioned

      ¡Buen Provecho!
