In his course ‘Nordic Cooking: Techniques with Fire’, chef Niklas Ekstedt asks whether fire is an ingredient or a technique. Very good question. Either way I wanted to use fire for this #TechniquesChallenge.

Mind you, instead of the Nordic use of fire (I’ll jump in with that) I’ve opted for American barbecue techniques, Bryan Furman’s course which I love.

I made a beer-braised chicken cooked in closed barbecue smoked with rosemary.

First, I made a brine to salt it. A technique that is explained very well in Ignacio Barrios’s Roasting in the Oven course.

Then comes the marinade technique. I marinated the chicken with herbs and spices with a dry rub.

Finally comes the technique of fire in a closed barbecue. I opted for indirect cooking, controlling the temperature at 160°C, for about one hour and 45 minutes, until the chicken reached 70°C inside. Inside the chicken, lemon and a glass of beer, so that steam cooks the chicken from the inside.

And halfway through cooking, the last technique. On the coals put several bunches of rosemary, close the barbecue and orient the chimney in such a way that the smoke should go through the whole cavity of the barbecue, smoking the chicken.

*In addition to the final result, I upload some photos of the process: the brine, the chicken with the dried rub and during the cooking in the barbecue.

Your beer-braised chicken looks absolutely mouthwatering! The way you’ve combined brining, marinating, and smoking techniques is so inspiring. Thanks to your post, I’ve decided to roast a chicken tomorrow. 😁 You’ve totally motivated me! 😊🍗

Pure wonder! I love that chicken sitting like it’s sunbathing. And how tasty it has to be!

I like that you took the time for each step, and that makes all the difference in a well done roast. The combination of the brine, dry rub and indirect cooking surely left the chicken juicy and full of flavor. And that rosemary smoke, a brilliant touch! You mentioned using the chimney to direct the smoke, which is key to a good smoke. Did you notice if the rosemary permeated the chicken more with its aroma or if it was more noticeable in the barbecue environment?

I see your creation is participating in our technique challenge. Don’t forget to tell us exactly which ones you used.

From what I see, the techniques you used were:

          1. Brining

          2. Dry Rub

          3. Indirect cooking in barbecue

          4. Cooking with liquid (Beer Can Chicken)

          5. Smoked with rosemary

If you wish, you can edit your publication to include these techniques. 🙌🏻

@soldamiani 😎jajajaja, me encanta.
