When we talk about cooking techniques, we immediately think of avant-garde and new techniques. I’m the first one. But cooking techniques have existed since fire was invented. Just tell it to the French, whose techniques have laid the foundations for everything that came after. Maybe that’s why I wanted to start participating in the #TechniquesChallenge with a French classic. Although aesthetically not the most eye-catching, this sole Meuniere.

In the dish, there is a first technique, the turning of the potatoes and carrot. Then, the steaming, with which the vegetables have been cooked, before sautéing them.

The third and most important technique is the meuniere, the name by which the sauce is known, as well as the technique of cooking a fish with butter.

The sauce is absolutely delicious, butter emulsified with lemon. I did not want to put too much sauce, so that the dish would not be heavy. The result is surprising and very delicate. In Bruno Strill’s course, Techniques of French cuisine, you will find everything. Bon appetit!

@undefined gracias Maloles. Si, yo creo que debe ser de los más antiguos, pero merece la pena 😉

what a nice tribute to French cuisine! 🇫🇷 ❤️🇫🇷.

The turning of the vegetables gives it that classic touch you see in great brigades. And the well-balanced meunière sauce makes the dish look light but full of flavor.

Thank you, Beatrice, for joining the challenge with this French classic. ☺️

@undefined gracias Sussan.

this Meunière sole is a tribute to the elegance of French cuisine! 🍽️ The combination of classic techniques well executed is what really makes a dish shine, and here you can see the care in every detail. The turning of the vegetables is impeccable, and that meunière sauce… pure subtlety! How did you achieve the perfect point of emulsion without the butter separating? 👀 Don’t forget to also share it on social media by tagging us @scoolinary_es Greatproposal for this challenge!

            • that’s why i don’t dare to make a dish with cooking techniques, because i think they have to be avant-garde and the ones that are not, as i have them internalized, i don’t consider them cooking techniques. heheheheheh
