I had kikos at home and seeing what I could do with them I saw the recipe of “El Kiko” from the Adrián Ramírez’s Trampantojos Dulces Course and I got to it.

It has a Kikos Mousse, a Milk Chocolate Sponge Cake, Kikos Praline, Salted Caramel and a chocolate and kikos bath.

what a great way to put a creative twist on kikos! 🙃

The combination of textures looks amazing, and that salted caramel filling sure makes a brutal contrast with the mousse. I can tell how well you learned from Adrian Ramirez’s course! How was the chocolate dipping process to achieve that even finish?

@Sussan Estela Olaya thank you very much Sussan. In my case, instead of cocoa butter, I added a little sunflower oil to the chocolate to make it more fluid. As for the bath, I put it directly into the chocolate, I turned it upside down and using a spatula, I drained it well and put it on a tray with baking paper and put the kikos on it. You have to do it quickly to be able to adhere the kikos.

@mercedesdelgado1977gmail-com What a nice trick with the sunflower oil to adjust the fluidity of the chocolate! I like that you take care of every detail to achieve a perfect finish. Thanks for sharing your technique, I’m sure many will find it helpful. 🫶🏻

this dish is a real crunchy masterpiece! 🔥 The combination of the kikos praline with the salted caramel sounds like an irresistible flavor punch, and that chocolate kikos dip gives it a spectacular finish. How did you get the mousse to have the perfect texture without losing the intense kikos flavor? You can see the work and precision in each layer. Brutal execution! 👏

@Sol Damiani thank you very much Sol, it’s very good. The mousse has just the right touch of kikos flavor. I was surprised because other mousses I’ve made have as a base a crème anglaise or other elaborations to which semi-whipped cream is added and in this one part of a gelatin with infused cream that after cooling, melts and is mounted along with more cream and is a texture that allows you to dose it with sleeve and soft on the palate. As the kiko is also in the praline and on top of the topping, its flavor is not lost.
