      Tenderloin and Raspberry Delight

      #TécnicasChallenge

Nothing like a good pork loin marinated and preserved in orza to enjoy the traditional flavors of our land.

It is a typical tapa of Jaén. A recipe of a lifetime to which I have given an avant-garde touch using the vacuum and sous vide technique (in the traditional way it is fried) and accompanying it with freeze-dried raspberries. Its acid and fruity flavor provides a surprising contrast with the meat.

I usually serve it as my grandmother taught me, with paprika de la Vera but it is in the marinade and today I had the raspberry at hand … That vibrant color has led me to try it. Visually it is beautiful and in the mouth I can’t tell you anything. That’s why I wanted to call it this way😍.

      Techniques:

Defatting and chopping the piece With a knife remove all the outer fat until clean and cut into pieces about two fingers thick.

Marinade / marinade Put in a marinade of water, ice, salt, paprika, oregano and garlic for 48 hours in the refrigerator. Then remove and dry the pieces well.

Vacuum packing Vacuum pack with a little oil. Seal

Cooking at low temperature Cook for 1 hour at 65ºC. Remove from bags and dry.

Brown on griddle Brown on griddle with a little extra virgin olive oil on all sides.

Storage in oil Place in a jar (or glass tupperware container) and cover with extra virgin olive oil. Put in the refrigerator. It keeps well for a couple of weeks.

Slicing of the piece Remove a piece or whatever you need at least 20 minutes before serving and cut into thin slices.

Serve cold, drizzled with a good EVOO and freeze-dried raspberries to taste.

If you do not want the raspberries, serve with sweet or spicy paprika, pepper and salt. It can also be microwaved and served hot on a slice of bread or as a filling in sandwiches. But always washed down with a good EVOO 😉.

It has been our tapa today (I almost always have lomo en orza), I did not plan to take pictures, but I liked how the dish looked and I was able to take these before my husband put his fork in😅

@undefined Muchas gracias Sussan.
