      Over here, #tecnicaschallenge version 2.

A cake with 4 techniques, some easier than others.

Cocoa breton base, from Salomon’s course, I really loved it, that texture that even seems moist, like the alfajores from Mar del Plata. A thousand applauses here.

On the base, an orange curd and sweet tangerines. I loved it a lot. I thought about making it with lemon and grapefruit, but these 2 were going to steal the show. Although it is a classic curd, I added unflavored gelatin to make it into a disk shape, and freeze it to have more stability to work with.

On top of the curd a wonderful layer of pastry cream, flavored with semi bitter chocolate, from the genius Bachour. Another round of applause here, delicious. I had some left over and used it to fill some pear macarons (another day I will show the photo)

Finally an Italian meringue, orange and tangerine flavor, using peel and a few drops of the juice in the syrup.

The orange slices, nothing special, just to show what’s hidden.

I hope you like it as much as my guests and I do. Next time I must make it only with pink grapefruit.

The Breton cocoa base sounds brutal, that kind of texture that tricks the eye because it looks wet, but it has just the right crumble.

I like that you used Bachour’s pastry cream, because besides being infallible, it sure added an incredible unctuousness to the whole. How did you feel the balance between the sweetness of the mandarin and the bitterness of the chocolate? Sometimes those contrasts are what make a dessert stay in the memory.

Glad to see you joined the challenge with everything and don’t forget to name the techniques you used(you can edit your post if you wish).

I see that you used the techniques of: sablage (sandblasting) technique, orange and tangerine curd, custard technique with starch thickening, following Chef Bachour’s method, Italian meringue, flavoring (infusion) technique, enhancing the flavor of the meringue with citrus notes.
        Greetings.
