      Recipe in process

I decided to make bread with olives to sell in the bakery, more specifically ciabattas at 85% hydration

Late I realized that I did not have the required amount of olives, the baker’s percentage was off by 100 grams, 100 measly grams!

The machine was already running, the gluten was forming, I no longer had time to adapt the recipe so my only option was to find something to mix the olives with to make up for the missing grams

Going through an encyclopedia of flavors I came across a very interesting mix “olives and almonds”.

I must admit I was quite skeptical, but I didn’t have time to hesitate so I took a spoon with some olives, added a couple of almonds and tasted

I don’t have enough vocabulary to describe its taste, it was a mixture of salty, sour and sweet that I had never experienced in my life

It was a fantasy that enveloped my palate, an explosion in my head after discovering a completely new flavor

The dough is still being made, but I wanted to share this little anecdote with you, this desperation that led me to discover and create a completely new recipe

        what a great story!

From an oversight to a discovery this reminds me of how the “potato chip” was born, someone dropped a potato in hot oil and the potato chip was born. Or like the discovery of Roquefort, which was basically the fault of someone forgetting their cheese in a cave.

Best of all, you now have a unique combination of flavors that can be your personal signature. Can you imagine if this bread becomes a classic in your bakery?
The combination of olives and almonds sounds like something that shouldn’t work…but now I need to try it! That touch of salty, sour and sweet in one bread sounds like a surprise to the palate.
and how did the dough turn out in the end – did the almonds add anything to the texture or just the flavor? I’m intrigued to know if the toasted notes of the almond are felt after baking.
Thanks for sharing this amazing story and anecdote with the community.

        • @Sussan Estela Olaya I’m baking right now

I incorporated the almonds in the form of praline and processed in a mulinex

It does not provide more crunchiness, but it does enhance the flavor of the olives, it is a curious mixture, as it accentuates the natural flavor of the olive leaving aside those strong notes that leave the brines of the canning giving a small sweet nuance, but if you were not told you would never imagine that these are almonds

What a story mate! As Sussan says, this is how wonderful recipes are born and I think this one is going to be unique. How much I would give to try that bread…I will have to settle for seeing the result when it comes out of the oven🙂
