Hello!!! I present you my #tecnicaschallenge

It’s a cake I made a while ago, but I didn’t want to stop showing it, because it was one of those moments of experimenting flavors and it was a great success.

The base is flavored dough with lime zest.

Anana (or pineapple) jelly made with agar agar.

On top of the gelato a coconut cream. Heat the cream and milk with coconut, let it sit for a while and then filter it over the white chocolate (I used the filtered coconut to make coconut alfajores and they are also very tasty, but that’s another story)

Finally I made a lime flavored Italian meringue, replacing part of the water with its juice and a bit of the zest to make it more intense.

On top of the meringue I put some pieces of pineapple with neutral napage, so they look better and don’t oxidize.

That was all. I have a lot of ideas going around, but I’m traveling and I won’t be able to produce everything my head wants!🤣🤣🤣🤣

        hey, this looks amazing! 😍

I really like how you went about putting together layers with flavors that match perfectly, and the hint of lime in the meringue sounds like genius. I imagine the gelled pineapple gives it a fresh contrast and a bit tart, or does it feel sweeter? I can already see you turning every experiment into a masterpiece!!!. Thanks for joining the challenge and sharing it with the community.🙌🏻

        • @sussan_scoolinaryteam hola!

        • Ths cake looks amazing! I thought it was a Lemon Pie, but only after reading, I understand it is actually so much more elaborate with Lime, Coconut and Ananas! I am super curious how this tastes.

          • @betty-tsfoni thanks! You have to try IT. I just loved IT! Not difficult at all, just time, patience, and MIP before you start every part of IT.
