• Hello good afternoon, morning, evening. I hope you are very well, I have been practicing the croissant technique and the truth is that I would like to know what I can improve, the croissants in the center lack a better opening, but in the forming they look good, in the laminate everything looks excellent, and at the time of baking the croissants burst somewhere. I don’t know what could happen. I work with low temperatures, I made a mixture of strong flour and medium flour. I attach a couple of pictures for those who can advise me

daniel, your croissants look great! Achieving a “perfect” croissant takes a lot of practice until you master the technique, but you are on an excellent path.

        About the problems you mention
        1. Lack of opening in the center: This can be due to a very strong lamination that compresses the dough too much or to a folding that does not distribute the layers well. Make sure you don’t press too hard on each fold.

        2. Bursting in the oven: This is usually caused by insufficient proofing or a baking temperature that is too low. Try to prolong the cold fermentation to better develop the structure and bake at a higher temperature at the beginning (200-210°C) to give it a better push.

        3. Flours: The combination of flours you use is interesting, but be sure not to use a flour that is too strong and makes the dough elastic and makes it difficult to develop layers. Remember to use a flour with a PL between 0.4 and 0.7.

Overall, you’re doing great! Just small adjustments and you are sure to see improvements.šŸ«¶šŸ»
