      #TomatoChallenge (Part 2)

      Ode to the Tomato

Second part of today’s post. This is the other plating of my proposal. It has 4 different tomato textures.

Tomato Spaghetti, Tomato Sponge, Tomato Powder and Tomato Mousse that goes inside the Beer Bonbon with Pistachios, Fresh Basil and Black Seed. All drizzled with early EVOO from my land.

Here I did not put the pistachio praline, nor the oil earth that I have replaced by this early olive oil. I did add to the dish some pieces of tomato sponge that I made a few days ago and that I kept in a vacuum packed tupper to check its resistance.

I have the feeling that it has lost some color? the flavor is more or less the same. I took pictures with and without it to see the results. I choose without it, what do you think?

The anecdote of this dish was to see my husband start to eat it with some doubt when I told him it was tomato. His response was: “With how good a tomato with salt is …” I looked at him sideways, start eating it and not stop until finished was seen and not seen 😂. He liked it so much, that he covered the plate with bread without leaving a trace of what you see.

It was great to make this other version. Everything is written down so I won’t forget the next time I want to make it.

Maloles, with every presentation of yours, I am shocked and happy. 😍
You do an amazing job exploring the textures of the tomato in this dish. I’d love to know what your creative process is like or what inspires you to create such delicious dishes.

I find it fascinating how each element in your creation brings a different dimension, from the smoothness of the mousse to the tomato sponge. It’s quite a gastronomic experience, both visually and in the mouth.

I have a question about the beer bonbon with pistachios: how did you manage to balance its flavors with the rest of the dish? I also found the vacuum preservation test of the tomato sponge interesting, did you notice only a loss of color or also a loss of texture?

Thank you for sharing this creative proposal with the community.

What a great presentation too, the second proposal, I wouldn’t know which one to go with. And I love your anecdote 😆. A bold and very well constructed dish 😍.

Your game was called, **tomato trotamundos**! 🍅✨ Congratulations for joining with another totally different proposal to the previous one in the **Tomato Challenge**, proving that this ingredient has more lives than a cat in the kitchen.

The “tomato with salt”. I confess I’m envious of your husband hahaha Shall we make change with him already? 😆 I love how you played with the textures and even had the luxury of doing preservation tests. I agree, it looks to me like the sponge lost color over time. can you think of a way to prevent it from happening, @sussan_scoolinaryteam? what a marvel you achieved here! 👏
