      #TomatoCallenge (Part 1)

      Chef’s Challenge

Tomato Spaghetti, Beer Bonbon filled with Tomato Mousse, Pistachios and Fresh Basil, Pistachio Praline, Tomato Dust, Oil Earth and Black Seed.

There are two of us in the house and there are always some baked preparations left over. You already know that I like to give new life to my dishes, especially if what is left is tasty.

I have called my dish this way because it has come out of several different elaborations, some born from basic cooking and now reconverted into a dish of molecular cuisine. Without a good base, nothing would be possible. I tell you the process:

The beer mousse of the first dish I presented for the challenge, I put some sheets of gelatin, filled some molds so pretty and put in the freezer (it is the technique of my salmorejo bonbons).

I filled the mold with tomato mousse, another texture that was born from the spaghetti.

For the spaghetti, I cooked a few minutes canned crushed tomato, natural tomato from the canned tomato I made from the course and that I crushed because I wanted to give it some more texture, basil, garlic, salt, pepper and water. In order not to extend here, I will upload video with the complete process as soon as I can 😉.

I put some pistachio praline dots that I made for the previous challenge ( from the éclairs). I like sweet and sour flavors and since this one was for me, I wanted to give it a try.

Oil earth ( I already published some time ago in a post and video). I wanted to fill those “holes” that the spaghetti left when it came out of the tube (you can see the video from a couple of days ago).

I sprinkled with the tomato powder that I also posted and black seed.

I didn’t have it all with me but I was the one who was going to try it and I jumped into the void 🤣 The result of all these textures and flavors I assure you is brutal!

It was like painting a canvas. I had the elaborations but I didn’t want to make two dishes the same. So, mine is sweet and sour and my husband’s is salty and with some different texture as you will see in the next post 😎.

I will try to upload it this afternoon while I am next to my mom if she is calm. If I can’t, I’ll do it before bedtime. I hope I don’t fall asleep before, I come home exhausted🤪.

A lot of different textures, absolute use of them, you have a lot of merit, with all that you have on top of it.

        Very original and well used

rEVOLUTIONARY! 🚀 Once again elevating the #TomatoChallenge to stratospheric levels. That ability to reuse elaborations and take them to a new molecular dimension is pure forward-thinking culinary art. It fascinates me how you play with textures and transform ingredients with such ingenuity.

I ask you: what was the most challenging part of integrating these techniques? Because getting each element to coexist in harmony without any of them overshadowing the other is MASTERFUL 🙌.
I wonder how many more wonders you could create with tomato, Lo, if we gave you a whole month… 🔥 Sublime! 🚀🍅

Congratulations Maloles for always surpassing yourself and wanting to go one step further. Hats off to you for what you have done and the amount of photos you have submitted for the challenge. In addition to reusing preparations from previous challenges ….

I would love you to tell us about your creative process, i.e. how you conceptualize the dish (from the combination of flavors, to the plating) and the whole creative process before you start cooking…. can be of great help to many Scoolinars

@lorena-hidalgo-Scoolinary Gracias Lorena !

@lorena-hidalgo-Scoolinary Por fin puedo contestar Lorena.

Y me quedo pensando…

          • I thought I had seen it all, but this is so inventive! And looks great! Standing ovations from me! 👏👏👏

            incredible work, Maloles!

I was amazed at how you raise the level of each preparation.

The level of detail and creativity in every element of the dish is noticeable. The combination of textures and flavors, from the tomato mousse to the oil earth, sounds spectacular.

The tomato spaghetti really caught my attention. It’s amazing how you combine modern techniques in your creations.
I also find it fascinating how you have transformed ingredients from previous preparations into something completely new. Would you say that this way of reusing preparations is something you usually do in your kitchen?
thanks for sharing your process in such detail! ❤️

@sussan_scoolinaryteam Muchas gracias Sussan.
