• #TomatoChallenge

I keep learning and trying new recipes. Here I’m inspired by the tomato tartar that Tony Botella teaches us in his course “Cooking under vacuum without heat” and with this recipe I join the #TomatoChallenge. I present the same tartar in two different dishes. As a garnish I have made a tuile (tuile) of basil and parmesan.

how great to see you joining the #TomatoChallenge again! 🎉 I can tell you’re enjoying this creative process and exploring the possibilities of tartar to the fullest. It’s quite a show of versatility to make the same preparation look so different in two presentations – that’s pure culinary art!

The basil and parmesan tuile is an elegant detail full of character. How did you achieve the balance between the crunchiness and the flavor of the basil? Sometimes this herb can dominate, but here it seems to be in perfect harmony. keep it up, you surprise us more and more each time! 🍅✨

        • @Sol Damiani Gracias otra vez.Pues aquí he usado un truco.
