Yesterday we went back to making salt fish. Unlike the previous post, in this iteration I put since we removed the salt shell, the skin, took out a loin and then the fillets from the bottom.

      enjoy!

The salt crust looks perfect, I’m sure the fish was juicy and well seasoned. What garnish or sauce do you usually accompany your salt fish with?

Thanks for sharing with the community. 🙌🏻

How good it looks! and how well the salt crust has turned out. When I make salt fish, usually sea bass or sea bream, I serve it with just a drizzle of olive oil on top.

That fish must have been delicious. What a perfect crust. Which fish was Jorge?

One question, how do you manage to upload a video of more than a minute? I can barely upload videos of 25 seconds at most….

spectacular execution! The salt fish technique is quite an art, and you can tell you’ve fine-tuned every step 🔥🐟. I like that you showed the whole process; that detail of removing the loin and then the fillets is key to keeping the texture intact. Now, technical question: did you make any adjustments to the cooking point from last time? I’m interested to know if the salt coating influenced different times or results. there’s culinary perfection in the air here! 👏
