Tomatoes are one of my favorite ingredients. This year we rented a garden and of course in the summer we planted tomatoes, but when it was time to remove the plants we found small tomatoes that were not going to ripen. So we picked them and thought about what to do with them.
* First we made a green tomato “kimchi“, in which we substituted the Chinese cabbages for these tomatoes.
* Then we made a pickle with the tomatoes cut in slices, here we used a very strong local vinegar.
* Then we prepared a brine and introduced the tomatoes (as if they were olives)
* And finally a green tomato sauce, I don’t have a photo of this one because I made very little and it ran out immediately.
I have to say that, except for the tomato sauce, all the preparations have improved over time and that an ingredient that seems to be “leftovers” and is usually thrown away can get something exquisite. I encourage you to take advantage of everything and to get these delicacies #TomatoChallenge

santiago, I admire your creativity in all the versions you took advantage of green tomatoes! It is fascinating how you transformed something that many would consider a waste into fermented and pickled products with so much character. The idea of making a green tomato “kimchi” instead of Chinese cabbage seems innovative to me, it would be interesting if at some point when your kimchi is ready you could tell us how the flavor changed with the cabbage replacement.
I am also intrigued by the brine, did you notice that the tomatoes took on a texture similar to olives or did they retain more of their original firmness.
thanks for sharing these very interesting ideas!. 🙌🏻

The kimchi tomatoes have a very powerful flavor, and when bursting them in the mouth is an explosion of flavor, and if we include the spicy characteristic of gochugaru and fermentation. I can’t describe it.
Afterwards, most of the tomatoes in brine are flattened, as if they had deflated, except for the small ones that are still whole. In terms of flavor, they are very good but you can’t overdo it in any recipe because they are a bit salty.
Uff no sabría describirlo.

Saludos.

congratulations on participating in the #TomatoChallenge! 🍅 We’re happy to have you in this community! We really appreciate this approach where you show how to make the most of a “not perfect tomato” (is there such a thing?). Thank you for your creativity and for bringing so much to the challenge.
Your green tomato kimchi idea is fascinating, a risky and brilliant variation. 👏 How did you manage to balance the spicy and sour flavors in this version? I’m sure every day that kimchi gets better and better like a fine wine! 🍷 Let’s keep innovating!

🍷 ¡A seguir innovando!
