      #EclairChallenge

Chef Fran Segura defines his eclairs as aesthetic, tasty and conceptual. I was inspired by how he explains the way he conceptualizes his collections. That’s why I decided not to replicate the eclair recipes from the courses but to try to tell something through them. Something about me.

I wanted to tell something about the place where I have been living for a short time. Because I left the big city for the countryside, in empty Spain, and I still find it all surprising.

Thus, thyme, whose scent pervades everything, had to be present; wild blackberries whose brambles have already torn a few shirts; walnuts, from the walnut tree that gives us shade in the summer evenings; honey from the Alcarria; and of course lavender… from the lavender fields that in July dye the whole environment purple.

      • -Eclair filled with lavender cream and covered with honey glaze, lavender flowers and strawberries
      • -Eclair filled with lemon cream and covered with honey glaze, thyme and walnuts
      • -Eclair filled with blackberry cream and covered with white chocolate ganache and blackberries*

Thanks to chef Fran Segura and the Scoolinary team for this challenge. It has not been an easy challenge for me, because baking is hard for me. But I loved doing it and I managed to unlock a fear, and because they were delicious!

*The blackberry cream is made from homemade wild blackberry jam, but not blackberries, that their season is September.

Beatriz you have been very nice, you have also made some very original flavors.

The beautiful presentation, what a pity not to be able to try them, visually outstanding

beatriz, how wonderful to read your creative process! ❤️

We love how you managed to capture your environment in each éclair, turning them into a sensory and emotional experience. It is amazing to see how, through the course, you have found your own inspiration and created flavor combinations with personal meaning.

The idea of using local and wild ingredients, such as thyme, lavender and blackberries, is fascinating. Was there any ingredient or combination that surprised you more than expected? Thank you for sharing this journey with us and congratulations for overcoming that challenge in pastry, you did amazing! 🙌🏻

          @Sussan Estela Olaya

@undefined ¡Qué maravilla leer tu experiencia, Beatriz!
