Artichokes with poached egg, mustard vinaigrette and jerky

You can see that I am in love with artichokes and once again I bring you a special dish. They are candied artichokes, poached egg, sliced mushroom and all accompanied with a vinaigrette that combines egg yolk, mustard and jerky. Here goes the recipe 😉

      Ingredients:

      • 3 or 4 artichokes
      • 2 sprigs of parsley
      • ½ L of olive oil
      • ½ Lemon
      • 2 cloves of garlic
      • Mushrooms
      • For the vinaigrette:
      • 1 egg yolk
      • 50 gr mustard
      • ¼ of chopped chives
      • Cecina
      • Black pepper
      • Perrins sauce
      • Extra virgin olive oil
      • Maldon salt

Peel the artichokes, cut into quarters and reserve in ice water.

Heat half a liter of oil in a casserole with two cloves of garlic and a sprig of parsley. Dry the artichokes on absorbent paper and confit them in the oil (20 – 30 minutes).

      For the vinaigrette:

      • Separate the yolk from the white of the egg. Mix it in a bowl with the mustard and a dash of Perrins sauce. Whisk. Add the oil from the confit in a trickle while whisking until it emulsifies. Add the jerky and finely chopped chives and continue whisking. Set aside.
      • For the poached egg:
      • In a pot with hot water and without boiling pour the oil and stir quickly to create a ‘whirlpool’. Add the egg and wait a few seconds until the white is cooked. Remove carefully so that it does not break.
      • In a frying pan, sauté the candied artichokes until golden brown.
      • Arrange them on a plate as desired, season with the vinaigrette and place the poached egg in the center. Finish with a few slices of mushrooms and Maldon salt.
